Japanese-Style Curry Rice! A Completely Different Way of Making It — Osusume #OuchiGohan Blog
At Osusume #OuchiGohan, I make curry quite frequently, and for some reason, I suddenly decided yesterday that I wanted curry for dinner and started making it. This time, I made it in a completely different way from usual.
Normally, I put all the ingredients into a pot, cook everything at once, and finish it in a short time. It is a simple, hassle-free way of cooking that I like, rather like making instant ramen. This time, however, I properly stir-fried all the meat and vegetables in a frying pan with salad oil. After that, I transferred everything to a pot, added water, and simmered it. I have tried stir-frying the ingredients directly in a pot before, but I do not really like doing it that way.
After simmering it for a while, I inserted a skewer into the potatoes and carrots to make sure they had become tender. Then, at the very end, I added the curry roux and stirred everything thoroughly. However, I thought that cooking the curry for too long might reduce its aroma, so this time I added a small amount of granulated bonito-stock seasoning and cooked it only briefly before finishing it.
This time, I was aiming for a Japanese-style curry, similar to the curry served at soba restaurants or the curry used in curry udon. My usual homemade curry is made according to the instructions on the box and therefore tends to have the same kind of flavor every time. This time, I wanted to eat curry with a slightly unusual flavor.
Usually, I make curry with efficiency in mind, without thinking too much about the process. This time, though, I felt like putting a little more effort into it. I used a frying pan, added salad oil, and tried various things.
At the same time, I remembered that the previous curry had contained too many potatoes and had been very chunky, so this time I used just one potato. I cut the carrot into small pieces and added only a little for color. I did not use any onion. By reducing the amount of vegetables, I wanted to focus more on the curry soup itself.
I could think of several other things I could do to make the curry even more Japanese-style, but I decided to stop at this point.
This time, I did not look at any recipes or anything online at all. I made it entirely based on my own thoughts and ideas. For some reason, I quite enjoy this kind of improvised, self-taught cooking, where I experiment through trial and error. However, I do not take risks to the point where the food might become inedible. I believe I use seasonings that I know from experience will produce a safe and enjoyable flavor.
There is also a sense of accomplishment when the dish turns out properly that is completely different from when I simply follow someone else’s recipe.
As for this Japanese-style curry, the result was fairly delicious, at least according to my own taste. The flavor was considerably different from my usual curry.
I normally use the amount of water indicated on the curry roux package, but this time I added a little more because I was also using granulated bonito stock. Even so, the overall flavor, including the saltiness, turned out stronger than usual. There are several possible reasons for this, including properly browning the meat and vegetables, but this time I actually preferred the slightly stronger flavor.
I have three kinds of granulated seasoning at home: consommé, chicken stock, and bonito stock. For some reason, though, except for the bonito stock, I have only a small amount of the other two left. Since I am trying to cut expenses and do not want to buy new seasonings, I have recently been using bonito stock as much as possible when seasoning my dishes.
That was also one of the reasons I decided to make this Japanese-style curry. In the past, I mostly used bonito stock when making miso soup.
Finally, I also asked artificial intelligence how to make Japanese-style curry. All I asked was:
“Please tell me how to make Japanese-style curry.”
